Cherry Chocolate Fruit Cake

  • 1 cup Sunrise Fresh Dried Cherries
  • White rum, enough to cover the cherries
  • ⅓ cup cocoa powder
  • 1 ¾ cup all purpose flour
  • 1 ½ tsp baking powder
  • 1 tsp baking sodaPinch salt
  • ½ cup unsalted butter, melted
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 2 eggs
  • ½ cup almond milk
  • 1 tsp vanilla extract
  • 1 cup chocolate chips, divided
  • ⅓ cup chopped walnuts


  1. Place the dried cherries in a small bowl and pour enough rum over the cherries to submerge the cherries. Cover with a paper towel and let sit at room temperature for 24hours. Drain the cherries and set aside.
  2. Preheat the oven to 350 degrees Fahrenheit and line a loaf pan with parchment paper.
  3. In a large bowl, whisk together the cocoa powder, flour, baking powder, baking soda, and salt.
  4. In a separate medium bowl, whisk together the melted butter and both sugars. Add the eggs and whisk again to combine. Add the almond milk and vanilla extract and whisk to combine.
  5. Fold the wet ingredients into the dry ingredients until almost fully incorporated. Fold in the soaked dried cherries, ¾ cup chocolate chips, and chopped walnuts. Pour the batter into the lined baking loaf and sprinkle the remaining chocolate chips over the top.
  6. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean
