  • 2 cups Sunrise Fresh Dried Cherries
  • ¼ cup balsamic vinegar
  • ½ cup red wine vinegar
  • ¼ cup water
  • 1 tbsp extra virgin olive oil
  • 1 medium red onion, diced small
  • 3 tbsp honey
  • ½ tsp ground ginger
  • 1 cinnamon stick, broken in half
  • Salt and black pepper to taste

  1. In a small bowl, stir together the dried cherries, balsamic vinegar, red wine vinegar, and water. Let sit at room temperature for 30 minutes.
  2. In a medium saucepan, heat the olive oil over medium low heat. Add the onions and saute, stirring occasionally, until mostly tender, about 5 minutes.
  3. Stir in the soaked cherries with the liquid, the honey, ginger, cinnamon stick, and salt and pepper to taste. Bring to a low boil, then reduce the heat to low and simmer.
  4. Continue simmering uncovered, stirring occasionally, until most of the liquid has evaporated, about 10-15 minutes. Remove the cinnamon stick and let chill, if desired, before serving.
