Balsamic Cherry Glazed Mini Meatballs

Balsamic Cherry Glazed Mini Meatballs

  • 1 lb ground pork
  • ½ lb ground beef
  • 1 egg, beaten
  • ½ cup breadcrumbs
  • 1 tbsp minced garlic
  • 1 tsp dried parsley
  • 1 tsp salt½ tsp ground black pepper

Balsamic Cherry Glaze

  • 1 cup Sunrise Fresh Dried Cherries, chopped
  • 1½ cups water
  • 2 tbsp balsamic vinegar
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 1 tbsp soy sauce
  • Pinch salt and pepper, to taste

  1. Preheat the oven to 400 degrees Fahrenheit and line a medium baking sheet with parchment paper.
  2. In a large bowl, combine all ingredients for the meatballs until all ingredients are well incorporated. Roll tablespoonfuls of the meatball mixture into small balls and place, spaced apart, on the lined baking sheet. Bake for about 15 minutes, or until the meatballs are completely cooked through.
  3. Add all ingredients for the balsamic cherry glaze to a medium skillet. Cook, stirring often, for about 5 minutes, to incorporate the flavors and thicken the sauce.
  4. Add the cooked meatballs to the skillet and toss to coat in the cherry glaze. Serve hot on skewers with the glaze spooned over top.
