In a small bowl, stir together the dried cherries, balsamic vinegar, red wine vinegar, and water. Let sit at room temperature for 30 minutes. -
In a medium saucepan, heat the olive oil over medium low heat. Add the onions and saute, stirring occas ionally, until mostly tender, about 5 minutes. -
Stir in the soaked cherries with the liquid, the honey, ginger, cinnamon stick, and salt and pepper to taste. Bring to a low boil, then reduce the heat to low and simmer. -
Continue simmering uncovered, stirring occasionally, until most of the liquid has evaporated, about 10 - 15 minutes. Remove the cinnamon stick and let chill, if desired, before serving.
