Ingredients
Peach Compote
- ½ cup dried peaches, diced
- ½ cup water
- ⅛ cup coconut sugar
- ½ orange, zested
- 1 tbsp orange juice
- ½ cinnamon stick
- Pinch of nutmeg
- Pinch Salt
Overnight oats
- 1 cup Oats
- 1 5oz container greek yogurt
- 2/3 cup milk of choice
- 1 tbsp maple syrup
- 1 tbsp chia seeds
- 1 tsp vanilla
- Pinch of salt
Instructions
- In a small saucepan, add the peaches, water, coconut sugar, orange zest, orange juice, cinnamon stick, nutmeg and salt and bring to a boil over medium heat. Reduce heat and simmer for about 15 minutes or until the liquid becomes a syrup. Remove from heat and let cool completely.
- To make the oats, add the greek yogurt, oats, milk, maple syrup, chia seeds, vanilla and salt in a medium bowl and stir until combined. Place mixture in an airtight container and let chill overnight.
- To assemble, add a layer of the peach compote then a generous layer of the oats and top with the compote again. Sprinkle with cinnamon if desired and enjoy!
