Caramel Apple Snickerdoodles

Caramel Apple Snickerdoodles

  • 2 ¾ cup all purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1 tsp salt
  • ½ cup Sunrise Fresh Apples, finely crushed (food processor works best to get it fine)
  • 1 cup unsalted butter, room temperature
  • 1 cup white sugar
  • ½ cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 12 oz bag caramel bits

Cinnamon Sugar Mixture

  • 1 tbsp cinnamon
  • ¼ cup white sugar

  1. In a medium sized bowl, combine the flour, cream of tartar, baking soda, salt, and crushed apples. Mix until combined and set aside.
  2. In a standing mixer, add the butter, sugar, and brown sugar. Beat for about 2-3 minutes on medium speed until light and fluffy.
  3. Add the eggs and beat again until combined.
  4. Slowly add the dry ingredients until just combined. Fold in the caramel bits.
  5. Place the dough in the fridge for 30 minutes to chill.
  6. Meanwhile, preheat the oven to 350 degrees Fahrenheit and line 2 large baking sheets with parchment paper. Mix the cinnamon and sugar in a bowl until combined.
  7. For each cookie, roll about 2 tbsp of dough into a ball. Roll the dough ball in the cinnamon sugar mixture and palace on the lined baking sheet. Repeat with the remaining dough.
  8. Bake for about 8 minutes and remove from the oven. Let cook on the cookie sheet for a couple minutes then transfer to a cooling rack.
  9. This recipe should make about 2 dozen cookies
