Place the dried cherries in a small bowl and pour enough rum over the cherries to submerge the cherries . Cover with a paper towel and let sit at room temperature for 24 hours. Drain the cherries and set aside. Preheat the oven to 350 degrees Fahrenheit and line a loaf pan with parchment paper. -
In a large bowl, whisk together the cocoa powder, flour, baking powder, baking soda, and salt. -
In a separate medium bowl, whisk together the melted butter and both sugars. Add the eggs and whisk again to combine. Add the almond milk and vanilla extract and whisk to combine. -
Fold the wet ingredients into the dry ingredi ents until almost fully incorporated. Fold in the soaked dried cherries, ¾ cup chocolate chips, and chopped walnuts. Pour the batter into the lined baking loaf and sprinkle the remaining chocolate chips over the top. -
Bake for 40 - 45 minutes or until a tooth pick inserted into the center comes out clean
